Ingredients
1.5 lbs sirloin steak (cut into bite-sized pieces)
1.5 lbs baby potatoes (halved)
4 tbsp butter
4 cloves garlic (minced)
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp smoked paprika
1 tsp Italian seasoning
Fresh parsley (optional, for garnish)
Instructions
1. Roast the Potatoes
Preheat oven to 425°F
Toss potatoes with olive oil, salt, pepper, and paprika
Roast 25–30 minutes until crispy and golden
2. Sear the Steak
Heat a skillet (cast iron if you’ve got it) over high heat
Add steak in a single layer (don’t overcrowd)
Sear 2–3 minutes per side until browned
3. Add Garlic Butter
Reduce heat to medium
Add butter, garlic, and Italian seasoning
Toss steak bites in the melted butter for 1–2 minutes
4. Combine & Serve
Toss steak and potatoes together or serve side-by-side
Sprinkle with parsley
